Need Ideas for Star Wars Artwork

I need help with a problem. I have a guy who is a very talented artist who has had a long streak of bad luck, and is on the verge of losing his house. I already have 2 too many employees than I can afford because I hate to lay someone off, as both of those employees are in the same boat. While I can't justify to my partners about paying this artist to work for us, I can justify paying him to make custom drawings and paintings for my own Star Wars Custom Business and most likely I will just donate the works to be given away at Sandtroopers events.
My problem is I don't know what to have him do.
I want him to do a Star Wars interpratation of "Boulevard of Broken Dreams" by Helnwein, but that will be too elaborate to start off with (He isn't a Star Wars fan, but with the will of The Force, I will turn him into one)
I also have an idea of a version of "Dogs Playing Poker" but set in the Mos Eisley Cantina.
I need less elaborate ideas for him to start.

If he's good at portraits, have him do portraits of original trilogy heroes and villains. I think a 3/4 view of Tarkin with a deep black background would be cool. Plus Tarkin's face is really angular and could be done in your guy's style. Portraits, if they're done well are always interesting. Cantina band, See Threepio, Leia with the hair buns, Greedo, just to name a few. Or have him do some portraits of the more obscure, background characters.

If you're using theme of "Broken Dreams"? Rep Senate dies with Democracy? or Porkins drops/spills his big gulp in Xwing?
